One of my mother’s favorite drinks is lavender lemonade, so i made an attempt at recreating that in a cookie.
With lavender extract, you need to make sure you don’t overdue it. Its a very fine line between the essence of fresh lavender and eating soap.
Notes: I use sugar in the raw and 3 lemons to make sure the lavender doesn’t overpower. This recipe calls for 1/4 cup oil but you can easily use 1/8 cup to make them fluffier
Lemond Lavender cookies
2 1/2 cups all purpose flour
3/4 cup raw sugar
2 teaspoons baking soda
1/4 cup oil
3 zested lemons as well as some of the juice
2 teaspoons lavender extract
Roll into balls and top with more grated lemon and sprinkled sugar.
Bake at 350 for 15-20 minutes
